Pulled Beef Chilli with Super Grains and Smoky Slaw

Ingredients
GRAINS
- 1 pack super grains
- ½ cup frozen corn *
SLAW
- 1 pack Mexican dressing
- 1/3 cup yoghurt
- 1 pack slaw
CHILLI
- 1 brown onion, thinly sliced
- 1 clove garlic, minced
- 1 pack smoky chilli mix
- 1 can chopped tomatoes
- 1½ Tbsp tomato paste
- ½ cup chicken stock ^
- ½ can kidney beans, drained and rinsed
- 1 pack pulled beef
TO SERVE
- ½ bunch coriander, chopped *
Steps

Bring a pot of salted water to the boil.

Cook grains. Add super grains to pot of boiling water and cook for 17 minutes. After 17 minutes, add corn and cook a further 3 minutes. Drain well.

Dress slaw. In a bowl, mix together Mexican dressing and yoghurt. Add slaw, toss together and season.

Prep & cook chilli. Heat ¾ tsp oil in a fry-pan on medium-high heat. Cook onion, garlic and a pinch of salt for 2-3 minutes, until softening. Add smoky chilli mix and cook for 30 seconds, until fragrant. Add remaining chilli ingredients (except beef) to pan. Cook for about 5 minutes, until sauce begins to thicken.

Cook beef. Add beef to pan and cook for 3-4 minutes, gently breaking beef up as it cooks, until piping hot. Season.

Prep coriander.

Serve super grains topped with chilli, slaw and coriander.
