Summer Chicken Pasta Salad

Ingredients

PASTA

  • ½ pack pasta, drained
  • ½ broccoli, diced 1cm *
  • ½ bag green beans, sliced 2cm *
  • ½ bag baby spinach *
  • ½ pack sundried tomato dressing

CHICKEN

  • 275g pack lean chicken breasts, cut into 2 cm strips
  • 1 pack tomato chicken spice
  • 1 tomato, diced 1cm
  • 1 courgette, peeled into ribbons
  • 1 tsp vinegar ^

TO SERVE

  • Remaining sundried tomato dressing
  • ½ pack chopped walnuts
  • ½ pack feta cheese *

Steps

  1. Bring a pot of hot salted water to the boil.
  2. Prep & cook pasta. Cook pasta for about 6 minutes. Add broccoli and green beans to pot. Cook a further 2 minutes, until vegetables are tender. Drain well.
  3. Finish pasta. Place pasta and vegetables into a bowl, along with remaining pasta ingredients. Toss well to combine and season.
  4. Prep chicken. Pat chicken dry, season and rub with tomato chicken spice.
  5. Cook chicken. Heat 1 tsp oil in a fry-pan on medium heat. Cook chicken for 6-7 minutes, turning, until golden and cooked through.
  6. Add tomato, courgette and vinegar to pan. Toss with chicken and cook for about 1 minute, until tomato begins to soften. Add to bowl with pasta and veggies, toss to combine and season well.
  7. Serve pasta topped with remaining sundried tomato dressing and walnuts. Crumble over feta cheese.
