Beef Sirloin Steak with Freekeh Corn Salad and Salsa

Ingredients

FREEKEH

  • ½ pack freekeh
  • ½ corn cob, kernels removed
  • ½ broccoli, florets and stalk diced 2cm *

SALSA

  • ½ capsicum, diced 1cm *
  • 1 tomato, diced 1cm
  • 1/8 red onion, finely diced *
  • Zest and juice of ¼ lime
  • 1 Tbsp Mexican dressing

BEEF

  • 1 pack beef sirloin steaks

TO SERVE

  • ½ lime
  • 2 Tbsp chipotle crema

Steps

  1. Preheat BBQ grill or hot plate to medium-high (if using). Bring a pot of hot salted water to the boil.
  2. Prep & cook freekeh. Cook freekeh and corn in pot of boiling water for 15 minutes, until tender. Add broccoli and cook for 2-3 minutes. Drain well.
  3. Prep salsa. Add all salsa ingredients to a bowl along with a pinch of salt. Mix well to combine. Cut remaining lime into wedges.
  4. Prep beef. Pat beef dry and remove any visible fat (discard). Season.
  5. Cook beef. Heat ½ tsp oil in a fry-pan on mediumhigh heat. Cook beef for about 4 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Rest, covered.
  6. Thinly slice beef, reserving any resting juices.
  7. Serve freekeh topped with beef and any resting juices. Top with salsa and chipotle crema. Squeeze over lime.
