Easy Pan-Fried Fish with Minty Potatoes

Ingredients

Potatoes

  • 600g baby potatoes
  • 200g green beans
  • 1 cup frozen peas
  • 1 tomato
  • 2 Tbsp mayonnaise ^
  • 1 pack minty pesto
  • ½ pack baby spinach *

Fish

  • 1 pack market fish
  • ¼ cup flour ^

To Serve

  • 1 lemon

Steps

  1. Cook potatoes Preheat BBQ hot plate to high (if using). Dice potatoes 3cm, add to a pot and cover with hot tap water. Cook for about 15 minutes, covered. Thinly slice beans.
  2. Cook beans and peas After potatoes have cooked for 15 minutes, add beans and peas and cook a further 5 minutes, until tender. Drain and run under cold tap to cool slightly. Set aside to drain well.
  3. Cook fish Pat fish dry and remove any remaining scales or bones. Cut any larger fillets in half. Sprinkle both sides with flour and ½ tsp salt. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook fish, in batches, for 1-2 minutes each side, until just cooked through. Alternatively, cook fish on BBQ hot plate.
  4. Finish potatoes Cut tomato into wedges. Place in a bowl, along with cooked potatoes, beans, peas, mayo, pesto and spinach. Gently toss to combine and season. Cut lemon into wedges.
  5. Serve minty potatoes with fish and a lemon wedge.
