Beef Bolognese

Ingredients

Bolognese

  • 1 brown onion
  • 1 carrot
  • 1 pack beef mince
  • 1 pack tomato paste
  • 1 can chopped tomatoes
  • 1 pack Bolognese mix
  • 1 cup water ^
  • ½ pack baby spinach *

To Serve

  • 1 pack tagliatelle pasta
  • ½ pack finely grated Parmesan cheese

Steps

  1. Prep and cook veggies Bring a pot of salted water to the boil. Finely dice onion and grate carrot. Heat a small drizzle of oil in a deep fry-pan on medium heat. Add onion and carrot to pan. Cook for 3-4 minutes, until soft.
  2. Cook beef Add beef to pan and cook for about 6 minutes, breaking beef up as it cooks, until browned.
  3. Finish Bolognese sauce Stir in tomato paste, canned tomatoes, ½ tsp of salt, Bolognese mix and water to pan. Simmer for about 10 minutes, until sauce has reduced.
  4. Cook pasta Use hands to separate strands of pasta. Cook in pot of boiling water for 4-6 minutes, until just tender. Drain well and return to pot with a small drizzle of oil, to prevent sticking. Use scissors to cut pasta into smaller pieces for little foodies.
  5. Add spinach Roughly chop spinach and add to Bolognese sauce. Cover pan and leave spinach to wilt for about 2 minutes. Season.
  6. Serve pasta topped with Bolognese sauce and cheese.
