Cream Cheese and Mushroom Pizzas with Salad

Ingredients
Pizzas
- ¾ pack tomato paste
- 1 Tbsp sweet chilli sauce ^
- ¼ cup cream cheese
- 1½ Tbsp basil pesto
- ½ red onion
- ½ pack mushrooms
- 2 pizza bases
- 1 cup grated cheese
Salad
- 1 baby cos lettuce
- 1 tomato
- 1 Lebanese cucumber
To Serve
- Remaining basil pesto

Prep pizza bases Preheat oven and two oven trays to 220°C. Mix tomato paste, sweet chilli sauce and a small drizzle of oil together in a bowl.

Prep cream cheese & veggies Mix together cream cheese and first measure of basil pesto in a bowl. Thinly slice onion and mushrooms.

Prep pizzas Divide tomato paste mixture between bases and spread to cover. Sprinkle with cheese, then top with onion and mushrooms. Dollop with pesto cream cheese. Season.

Cook pizzas Place pizzas on preheated trays and cook for 12-14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Prep salad Chop lettuce and dice tomato and cucumber 2cm. Toss all in a bowl with a small drizzle of oil and vinegar. Season.

Serve wedges of pizza drizzled with remaining basil pesto and salad.
