Indian Lamb Burgers with Kasundi and Feta Yoghurt

Ingredients

Lamb Burgers

  • 1 pack lamb mince
  • 1 pack lamb spice
  • 1 egg ^
  • ¼ cup panko breadcrumbs
  • 6 burger buns
  • ½ telegraph cucumber *
  • 1 pack kasundi chutney

Feta Yoghurt

  • 100g feta cheese *
  • 150g yoghurt
  • 1 bunch mint, chopped

Salad

  • 2 carrots
  • ½ cos lettuce *
  • 1 pack sliced almonds
  • 1 pack orange and saffron dressing

Steps

  1. Make lamb patties Preheat BBQ grill to medium. Place lamb mince, lamb spice, egg, breadcrumbs and ¾ tsp salt in a large bowl, mix to combine and season with pepper. Divide into 6 then flatten into 1cm thick patties. Set aside in fridge.
  2. Prep burgers Cut burger buns in half and set aside. Thinly slice cucumber and set aside.
  3. Make feta yoghurt Crumble feta into a bowl, add yoghurt and whisk with a fork, until smooth. Fold through mint and set aside.
  4. Make salad Peel carrots into ribbons and roughly tear lettuce. Place in a large bowl with almonds and toss with orange and saffron dressing just before serving.
  5. Cook burgers Drizzle patties with oil and cook on BBQ grill for about 4 minutes each side or until just cooked through. Rest. While patties are resting, toast burger buns on grill for about 2 minutes each side or until lightly toasted and golden.
  6. Serve buns filled with patties, cucumber, chutney, yoghurt and salad. Serve remaining salad on the side.
