Beef Bowls with Teriyaki Dressing

Ingredients

Rice

  • 1½ cups Japanese brown rice
  • 2¼ cups water ^

Beef

  • 1 pack beef schnitzel
  • 1 pack beef marinade

Veggies

  • 1 carrot
  • 1 capsicum
  • ½ cos lettuce *
  • ½ telegraph cucumber *

To Serve

  • 1 pack teriyaki dressing
  • 1 pack sesame seeds

Steps

  1. Cook rice Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.
  2. Prep beef Pat beef dry, then cut into thin strips. Combine with beef marinade in a bowl. Set aside to marinate.
  3. Prep veggies Grate carrot and thinly slice capsicum, lettuce and cucumber. Toss with a drizzle of vinegar and oil just before serving.
  4. Cook beef Heat a drizzle of oil in a fry-pan on high heat. Stir-fry beef in batches, for about 1 minute, until just cooked. Cover to rest.
  5. Serve rice topped with beef, veggies, teriyaki dressing and sesame seeds.
