Mushroom Pesto Pizza with Salad

Ingredients
Pizza
- 3 pizza bases
- 1 pack tomato paste
- 2 Tbsp sweet chilli sauce ^
- ½ cup cream cheese
- 2 Tbsp basil pesto
- ½ red onion *
- ½ pack mushrooms *
- 1½ cups grated cheese *
Salad
- 1 baby cos lettuce
- 1 tomato
- ½ telegraph cucumber *
To Serve
- Reserved basil pesto (optional)

Prep pizza bases Preheat oven and two oven trays to 220°C. Cut one pizza base in half (to make it easier to fit on trays). Mix tomato paste, sweet chilli sauce and a small drizzle of olive oil together in a small bowl.

Prep cream cheese & veggies Mix together cream cheese and first measure of basil pesto in a small bowl. Thinly slice onion and mushrooms.

Prep pizzas Spread tomato paste mixture over bases to cover and sprinkle with cheese, onion and mushrooms. Dollop with pesto cream cheese. Season.

Cook pizzas Place one and a half pizzas on each preheated tray and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Prep salad Roughly chop lettuce and dice tomato and cucumber. Toss all in a bowl with a drizzle of olive oil and vinegar. Season.

Serve pizza drizzled with remaining basil pesto and salad on the side.
