Chicken Soba Noodle Salad with Sesame Dressing and Slaw

Ingredients

NOODLE SALAD

  • 1 bundle soba noodles
  • ½ cup frozen corn
  • ¾ bag Japanese slaw
  • ½ carrot, grated *
  • 1 spring onion, thinly sliced *

CHICKEN

  • 1 pack lean chicken breasts
  • 1 pack lime ponzu dressing

SESAME DRESSING

  • ½ Tbsp sesame seeds
  • 1 Tbsp soy sauce ^
  • ½ Tbsp water ^
  • 1 tsp vinegar ^
  • 1 tsp grated ginger *
  • ½ tsp honey ^
  • ½ pack peanut butter
  • ½ tsp sesame oil ^

TO SERVE

  • ½ bunch coriander, chopped
  • 1 spring onion, thinly sliced *

Steps

  1. Bring a pot of hot salted water to the boil.
  2. Prep & cook noodle salad. Add noodles to pot of boiling water, stir to separate and cook for about 2 minutes. After 2 minutes, add corn and continue to cook for 1-2 minutes. Drain, rinse under cold water and leave to drain well.
  3. Prep & cook chicken. Pat chicken dry and slice into 1-2cm strips. Heat ½ tsp oil in a fry-pan on high heat until very hot. Add chicken to pan and cook, undisturbed, for 1-2 minutes before stirfrying for 2-3 minutes, until almost cooked.
  4. Reduce heat to medium and add lime ponzu dressing to pan. Continue to cook for 1-2 minutes, until chicken is cooked. Rest, covered.
  5. Prep sesame dressing. In a salad bowl, whisk together all sesame dressing ingredients. Season.
  6. Add soba noodles and corn to bowl with sesame dressing, along with slaw, carrot, spring onion and chicken resting juices. Toss to coat and season.
  7. Prep garnishes.
  8. Serve soba noodle salad topped with chicken, coriander and spring onion.
