Italian Beef Sirloin Steaks with Salsa D'acciughe and Feta

Ingredients

VEGGIES

  • 1/3 cup frozen peas
  • 1 courgette, diced 1cm
  • ½ punnet cherry tomatoes, halved
  • 1 pack salsa d’acciughe
  • 1 handful baby spinach

BEEF

  • 1 pack beef sirloin steak

TO SERVE

  • 1 tsp pine nuts
  • 1 bunch basil, chopped
  • 1 Tbsp feta cheese, crumbled

Steps

  1. Preheat BBQ grill or hot plate to medium-high (if using).
  2. Prep veggies.
  3. Toast pine nuts. Heat a dry fry-pan on mediumhigh heat. Toast pine nuts in pan for about 1 minute, until golden. Set aside.
  4. Prep beef. Heat ¼ tsp oil in same pan on medium-high heat. Pat beef dry, remove all visible fat (discard) and season.
  5. Cook beef. Cook beef for about 4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered. Alternatively, cook on BBQ.
  6. Cook veggies. Add ¼ tsp oil to reserved pan. Cook peas and courgette for 2-3 minutes. Add tomatoes to pan, toss well to combine and cook for a further 1 minute.
  7. Add salsa d’acciughe and spinach to pan, toss to combine and season.
  8. Prep garnishes. Slice beef thinly reserving, any resting juices
  9. Serve veggies topped with beef and resting juices. Sprinkle over basil, feta and pine nuts.
