Chimi Pork with Spiced Black Beans

Ingredients
Pork
- 1 pack chimi marinated pork sirloin steaks
- 1 capsicum, thinly sliced
- 1 can black beans, drained and rinsed
- 1 pack frozen corn
- 1 pack smoky spice mix
- Juice of 1 lemon
To Serve
- Baby spinach
- Chimi yoghurt

Heat a drizzle of oil in a large fry-pan on medium heat. Season pork and cook for 4-5 minutes each side, until just cooked. Remove from pan and wrap in foil to rest.

prep capsicums & beans

Add another drizzle of oil to same pan and increase heat to high. Stir-fry corn and capsicum, for 3 minutes. Add smoky spice mix and beans and stir-fry for 1-2 minutes. Squeeze over lemon and season.

slice pork. Place a handful of spinach on each plate and top with beans, pork, resting juices and chimi yoghurt.
