Beef Caprese with Pearl Couscous and Basil Pesto

Beef Caprese

  • 1 pack beef sirloin steaks
  • 1 pack pearl couscous
  • 2 packs green beans
  • 8 vine tomatoes, cut into wedges
  • 1 pack mini mozzarella balls

To Serve

  • Basil pesto
  • Basil


  1. bring a medium pot of salted water to the boil on high heat (using hot tap water, with the lid on – for couscous).
  2. Heat a drizzle of oil in a large fry-pan on high heat. Pat beef dry, season and cook for 3-4 minutes each side (for medium), or until cooked to your liking. Wrap in foil to rest.
  3. Add couscous to boiling water and cook for 5 minutes. After 5 minutes, add whole beans to pot, and continue to cook for 3 more minutes, until beans and couscous are tender. Drain well.
  4. Toss tomatoes with cooked couscous, beans, mozzarella and a drizzle of olive oil and vinegar. Season.
  5. slice beef and serve on couscous. Top with basil pesto, basil, and any resting juices. Drizzle with olive oil if desired.
