Asian Lamb and Noodle

Ingredients

Asian Lamb

  • 1 pack lamb leg steaks
  • 1 pack lamb spices
  • 1 broccol
  • ½ pack Asian sauce

Noodle Salad

  • ¾ pack vermicelli noodles
  • 1 pack Japanese slaw
  • 1 Tbsp fish sauce
  • 2 Tbsp soy sauce

To Serve

  • Remaining Asian sauce
  • 1 pack sesame seeds

Steps

  1. Prep lamb and broccoli Bring a full kettle to the boil. Pat lamb dry and cut into 1cm slices. Toss with lamb spices and season. Cut broccoli into small florets.
  2. Cook noodles Place noodles in a heat-proof bowl and cover with boiling water. Leave for 5 minutes, then drain. Refresh under cold water, drain well. Drizzle with sesame oil to prevent sticking.
  3. Cook lamb Heat a drizzle of oil in a fry-pan on high heat. Cook lamb in two batches, turning, for about 3 minutes, until cooked to medium. Set lamb aside to rest. Keep pan on heat with a drizzle of oil.
  4. Cook broccoli Add broccoli and a splash of water to pan. Cook for about 2 minutes, until just tender. Return lamb, any resting juices and first measure of Asian sauce to pan. Toss to combine and season.
  5. Finish noodles Add slaw, fish sauce and soy sauce to bowl with noodles. Toss to combine.
  6. Serve noodles topped with lamb, broccoli, remaining Asian dressing and sesame seeds.
