Ingredients
Pumpkin
- 1 pack pumpkin wedges
Beef and Veggies
- 1 pack beef sirloin steaks
- 1 pack broccolini
- 1 pack cherry tomatoes
To Serve
- Tomatillo salsa

Before you start, preheat oven to fan bake 220°C (for pumpkin).

Roast pumpkin Toss pumpkin with a drizzle of oil on a lined oven tray. Season and roast for 18 minutes, until cooked.

Meanwhile, cook beef Heat a drizzle of oil in a large fry-pan on high heat. Pat beef dry, season and cook for 2-4 minutes each side, for medium (depending on thickness), or until cooked to your liking. Remove from pan and wrap in foil to rest.

Cook broccolini and tomatoes Add a drizzle of oil to same pan on medium-high heat. Stir-fry broccolini for 3 minutes. Add a splash of water and tomatoes (leave whole) and stir-fry for 2-3 more minutes. Add a splash of balsamic vinegar and remove from heat. Season. Slice beef.

Serve pumpkin with broccolini, tomatoes, beef and any resting juices and top with tomatillo salsa.
