Shiitake Mushroom Yakisoba

Ingredients

Yakisoba

  • 1 brown onion
  • 1 pack shiitake mushrooms
  • 1 baby bok choy
  • 1 Palermo capsicum
  • 2 cakes noodles
  • 1 pack black beans
  • 1 pack yakisoba sauce
  • 1 cup edamame beans

To Serve

  • 2 spring onions
  • 1 pack crispy shallots

  • Oil
  • Salt & Peper

Steps

  1. Prep veggies Bring a large pot of salted water to the boil. Thinly slice onion, mushrooms, bok choy, capsicum and spring onions.
  2. Cook noodles Cook noodles in pot of boiling water for about 6 minutes, until tender. Drain and set aside.
  3. Cook veggies Heat a drizzle of oil in a non-stick fry-pan on high heat and cook onion and mushrooms with black beans for about 3 minutes, until tender. Add cooked noodles, yakisoba sauce and edamame and cook on low heat for a further 2-3 minutes, until caramelised.
  4. Finish yakisoba Toss bok choy and capsicum through noodles and cook a further 1-2 minutes, until warmed through. Season to taste
  5. Serve yakisoba topped with spring onions and crispy shallots.
