Black Bean Pattie with Green Couscous

Ingredients

Patties

  • 1 carrot
  • 1 can refried black beans
  • ½ cup panko breadcrumbs
  • 1 pack black bean spices

Couscous

  • ½ pack baby spinach
  • ½ telegraph cucumber
  • ½ cup veggie stock
  • ½ cup couscous
  • 1 pack salsa verde

To Serve

  • 1 pack Indian yoghurt
  • 1 bunch mint

Have Handy

  • Oil
  • Salt & Peper

Steps

  1. Prep patties Grate carrot and add to a bowl with beans, breadcrumbs, black bean spices and ½ teaspoon salt. Set aside in the fridge for 5-10 minutes to firm up.
  2. Prep veggies Roughly chop spinach and finely dice cucumber. Set aside in a large bow
  3. Cook couscous Bring stock to the boil in a pot on high heat. Once boiling turn off heat, add couscous and a pinch of salt, stir, cover and leave for 5 minutes.
  4. Cook patties Heat a drizzle of oil in a non-stick fry-pan on medium heat. Dollop heaped tablespoon measures of patty mix into pan, flattening slightly. Cook for 2-3 minutes each side, until browned and cooked through. Set aside on paper towels.
  5. Finish couscous Add cooked couscous to bowl with veggies along with salsa verde. Toss to combine and season to taste.
  6. Serve couscous topped with patties, yoghurt and mint
