Beef Satay with Jasmine Rice

Ingredients
Rice
- 2 cups jasmine rice
- 3 cups water
Beef
- 1 pack beef sirloin steaks
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 pack sesame seeds
Salad
- 1 carrot
- 1 capsicum
- 2 baby bok choy
Satay Sauce
- 1 pack satay sauce
- ½ cup water

Cook rice Preheat BBQ hot plate to medium high (if using). Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.

Prep beef Pat beef dry, season and toss in a bowl with remaining beef ingredients.

Make salad Grate carrot; slice capsicum 1cm; thinly slice bok choy. Toss in a bowl with a drizzle of oil and vinegar. Season.

Cook beef Heat a drizzle of oil in a fry-pan on medium-high heat. Cook beef for 3-4 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest, covered. Reserve pan. Alternatively, cook beef and veggies on BBQ.

Heat satay sauce Wipe pan clean and return to low heat. Add satay sauce and water, bring to a gentle simmer and cook for about 2 minutes, stirring until thickened. Slice beef thinly against the grain and toss back through any resting juices.
