Seared Beef Sirloin with Soba Noodle Salad

Ingredients
Beef Sirloin
- 1 pack beef sirloin steaks
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
Noodle Salad
- 1 pack soba noodles
- 1 pack Japanese dressing
- 1 Tbsp sesame oil
- ½ telegraph cucumber
- 2 baby bok choy
- 1 courgette
To Serve
- 1 pack goma dare sauce
- 1 pack chopped peanuts
- ½ bunch coriander
Have Handy
- Oil
- Salt & Pepper
- Vinegar
- Soy sauce
- Sesame oil

Prep beef Preheat BBQ grill to medium-high. Bring a medium pot of salted water to the boil. Pat beef dry and toss with soy sauce and sesame oil in a shallow dish. Set aside to marinate.

Cook noodles Cook noodles in pot of boiling water for about 4 minutes, until just tender. Drain, refresh under cold water and drain again well. Place in a large bowl and toss with Japanese dressing and sesame oil.

Cook beef Cook beef on BBQ grill for about 5 minutes each side, for medium (depending on thickness), or until cooked to your liking. Rest, covered, for 5 minutes before slicing thinly against the grain.

Make salad Dice cucumber 1cm; thinly slice bok choy; peel courgette into long thin ribbons. Add to bowl with soba noodles and toss to combine. Season with pepper.

Serve soba noodle salad topped with seared beef, goma dare sauce, peanuts and chopped coriander.
