Thai Pork Salad with Mango, Tamarind & Coconut Rice

Ingredients

Coconut Rice

  • 1 cup jasmine rice
  • 1 cup water
  • 1 can coconut cream

Pork Salad

  • 1 pack pork fillet
  • 1 pack five spice
  • 1 mango
  • 1 Lebanese cucumber
  • 1 chilli (optional
  • 1 makrut lime leaf
  • ½ bunch coriander
  • 1 bunch mint
  • 1 pack mung bean sprouts
  • 1 pack peanuts and shallots

Thai Dressing

  • Juice of ½ lemon
  • 1 Tbsp rice wine vinegar
  • 1 tsp fish sauce
  • 1 tsp honey

To Serve

  • 1 lime
  • 1 pack tamarind sauce

Steps

  1. Cook rice Preheat BBQ grill to medium-high (if using). Combine rice, water, coconut cream and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, a further 8 minutes. Do not lift lid during cooking.
  2. Prep pork Pat pork dry and cut in half and in half again lengthways so you end up with 4 thin strips. Coat in five spice, a drizzle of oil and season. Prep salad.
  3. Peel mango, cut in half and cut into matchsticks. Thinly slice cucumber and chilli. Remove stalk from makrut lime leaf and thinly slice. Place all in a large bowl along with coriander, mint and mung bean sprouts.
  4. Cook pork In a small bowl, combine all Thai dressing ingredients. Heat a drizzle of oil in a fry-pan on medium heat. Cook pork for 2-3 minutes each side (depending on thickness), until just cooked through. Alternatively, cook pork on BBQ grill. Rest, covered, for 2-3 minutes before slicing thinly.
  5. Finish salad Add peanuts and crispy shallots to bowl with salad vegetables, pour over Thai dressing and lightly toss. Add sliced pork and gently toss through. Cut lime into cheeks or wedges.
  6. Serve tamarind sauce in bowls and pile salad up on top. Serve coconut rice in small bowls on the side. Squeeze over lime cheeks.
