Black Bean Salmon with Asian Slaw

Ingredients

Salmon

  • 1 pack salmon fillet
  • 1 Tbsp soy sauce

Slaw

  • 1 broccoli, cut into small florets and stalk thinly sliced
  • 1 pack slaw
  • 1 bok choy, thinly sliced
  • 1 capsicum, thinly sliced
  • ¼ cup wasabi miso dressing
  • 1 bunch coriander, chopped

Steps

  1. Preheat oven grill to high. Bring a full kettle of water to the boil.
  2. Prep salmon. Pat salmon dry and remove any pin bones. Place in a bowl with soy sauce, toss to coat and set aside to marinate for about 5 minutes.
  3. Prep & cook broccoli. Place broccoli and a pinch of salt in a heat-proof bowl and cover with boiling water. Cover and leave for 5-6 minutes. Drain, rinse under cold water and leave to drain well.
  4. Cook salmon. Once salmon has marinated, place on a lined oven tray and grill for 10-12 minutes (for medium), or until cooked to your liking. Rest, covered.
  5. Prep remaining slaw veg. Add all slaw ingredients (including broccoli) to a bowl. Toss well to combine and season.
  6. Serve slaw and flake salmon over the top.
