Cured Pork & Cheddar Pizzas with Lemon Slaw

Ingredients

Pizzas

  • 1 pack tomato paste
  • 2 Tbsp sweet chilli sauce
  • 1 pack cherry tomatoes
  • 1 red onion
  • 3 pizza bases
  • 2 cups grated Colby cheese
  • 1 pack cured pork and cheddar grind
  • 2 pinches of chilli flakes (optional)

Slaw

  • 3 Tbsp mayonnaise
  • Zest and juice of ½ lemon
  • ½ red cabbage
  • 1 courgette

Have Handy

  • Oil
  • Salt & Pepper

Steps

  1. Prep pizza Preheat oven to 220°C. Preheat two oven trays (or pizza stones if you have them). In a small bowl, mix together tomato paste and sweet chilli sauce. Cut tomatoes in half and thinly slice onion.
  2. Divide tomato mixture between pizza bases and spread evenly to cover. Sprinkle grated cheese evenly between bases. Roughly tear off small chunks of pork and cheddar grind and place on pizzas along with red onion and cherry tomatoes. Sprinkle with chilli flakes, if using, and season.
  3. Cook pizza Cut one pizza in half and place one and a half pizzas on each preheated tray. Cook pizzas for 12-14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking. Cut into wedges.
  4. Make slaw Whisk together mayonnaise, lemon zest and juice in a small bowl. Thinly slice cabbage until you have 3 cups worth and grate courgette. Toss both in a large bowl with 2 tablespoons of the lemon mayonnaise mix, until combined. Season to taste.
  5. Serve pizza drizzled with remaining lemon mayonnaise. Serve slaw on the side.
