- 600 g free-range chicken breast cut into steaks
- 1 tsp oil
- 2 baby cos lettuce thinly sliced
- 1 Telegraph cucumber cut in half lengthways & sliced
- 100 g Caesar dressing
- 70 g Parmesan cheese grated
- 5 8-inch wholemeal tortilla wraps
Prep chicken Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Season with salt and pepper. Cook chicken Heat oil in a large frypan on medium-high heat. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Rest, uncovered before slicing thinly. Prep salad While chicken cooks, thinly slice baby cos lettuce. Cut cucumber in half lengthways and thinly slice. Toss both in a large bowl with Caesar dressing and grated Parmesan and set aside for serving. Serve Assemble wraps with chicken and salad.
