Fresh Start’s Chicken Caesar Lunch Wraps

A healthier twist on a classic combination we all know and love. These wraps will hit the spot for a quick and easy lunch!

Chicken Caesar Lunch Wrap

Ingredients

  • 600 g free-range chicken breast cut into steaks
  • 1 tsp oil
  • 2 baby cos lettuce thinly sliced
  • 1 Telegraph cucumber cut in half lengthways & sliced
  • 100 g Caesar dressing
  • 70 g Parmesan cheese grated
  • 5 8-inch wholemeal tortilla wraps

Instructions

  • Prep chicken 
    Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Season with salt and pepper.
  • Cook chicken  
    Heat oil in a large frypan on medium-high heat. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Rest, uncovered before slicing thinly.
  • Prep salad 
    While chicken cooks, thinly slice baby cos lettuce. Cut cucumber in half lengthways and thinly slice. Toss both in a large bowl with Caesar dressing and grated Parmesan and set aside for serving.
  • Serve 
    Assemble wraps with chicken and salad.
