Slaw
- 1 Lebanese cucumber cut in half lengthways and thinly sliced
- 1 avocado thinly sliced
- 250 g precooked, shredded chicken breast
- 150 g slaw
Nuoc Cham Sauce
- 1 clove garlic minced
- 1 red chilli thinly sliced
- 1 lime juiced
- 2-3 tbsp fish sauce to taste
- 2 tsp maple syrup
- 1 tsp rice vinegar
Make slawCut cucumber in half lengthways and thinly slice. Thinly slice avocado. In a large bowl toss chicken, slaw and cucumber. Make sauceCombine all nuoc cham ingredients together in a bowl, taste and adjust accordingly. ServeDrizzle nuoc cham over the slaw and toss to combine. Top salad with avocado slices and sprinkle over chopped peanuts.
