Saigon Chicken Slaw

Ingredients

Slaw

  • 1 Lebanese cucumber cut in half lengthways and thinly sliced
  • 1 avocado thinly sliced
  • 250 g precooked, shredded chicken breast
  • 150 g slaw

Nuoc Cham Sauce

  • 1 clove garlic minced
  • 1 red chilli thinly sliced
  • 1 lime juiced
  • 2-3 tbsp fish sauce to taste
  • 2 tsp maple syrup
  • 1 tsp rice vinegar

To Serve

  • 2 Tbsp chopped peanuts

Instructions

  • Make slaw
    Cut cucumber in half lengthways and thinly slice. Thinly slice avocado. In a large bowl toss chicken, slaw and cucumber.
  • Make sauce
    Combine all nuoc cham ingredients together in a bowl, taste and adjust accordingly.
  • Serve
    Drizzle nuoc cham over the slaw and toss to combine. Top salad with avocado slices and sprinkle over chopped peanuts.
