Spicy Thai-Inspired Pulled Beef Wraps

Spicy Thai-Inspired Pulled Beef Wraps

Ingredients

Pulled Beef

  • 2 tsp sesame oil
  • 500 g pulled beef
  • 2 carrots grated
  • 2 tsp Thai green curry paste

Radish Pickle

  • 2 radishes thinly sliced
  • 1 Tbsp rice wine vinegar

Salad

  • 350 g slaw
  • 1 tsp Thai green curry paste
  • 4 Tbsp peanuts chopped
  • Sesame Peanut Dressing
  • 2 Tbsp vinegar
  • 1 Tbsp water
  • 3 Tbsp peanut butter
  • 1 Tbsp soy sauce
  • ½ tsp sesame seeds
  • ½ tsp sesame oil
  • ½ Tbsp honey

To Serve

  • 2 packs (4 pack) wheatmeal tortillas
  • 1 bunch coriander

Instructions

  • Cook beef: Heat oil in a frypan on medium-high heat. Add beef to pan, along with carrot and Thai green curry paste (add more or less curry paste depending on your spice preference). Cook for 5 minutes, stirring occasionally until hot through.
  • Meanwhile, make radish pickle: Thinly slice radish. Toss in a bowl with vinegar and a pinch of salt. Set aside to pickle. Drain just before serving.
  • Make dressing: Mix all sesame peanut dressing ingredients into a bowl.
  • Prep salad: Grate carrot. Add all salad ingredients to a second bowl, including the sesame peanut dressing. Mix well and set aside.
  • Heat wraps: Place stack of tortillas on a plate and microwave for about 1 minute, until warm.
  • Serve: Build your wraps with pulled beef, salad, radish and coriander.
