Aztec Beef Steak with Super Seed Salad and Chimmichurri

Ingredients
Super Seed Salad
- 1 beetroot, grated
- 2 carrots, grated
- 2 courgettes, grated
- 1/4 red onion, thinly sliced (optional)
- 1 pack super seed mix
- 75g yoghurt
- 1 Tbsp chimmichurri sauce
- 1/2 Tbsp vinegar
Aztec Beef
- 1 pack beef sirloin steaks
- 1 Tbsp From My Kitchen chimmichurri rub
To Serve
- Remaining chimmichurri sauce

Preheat BBQ grill or hot plate to medium-high (if using).

Prep & make salad. Toss all super seed salad ingredients together in a bowl with 1/2 tsp salt and set aside to allow the raw grated vegetables to soften. Season to taste.

Prep beef. Pat beef dry and trim any visible fat (discard). Season with salt. Combine chimmichurri rub with 1/2 Tbsp water in a bowl. Add beef and toss to coat.

Cook beef. Heat 1/2 tsp oil in a fry-pan on medium-high heat. Cook beef for about 4 minutes each side for medium (depending on thickness), or cooked to your liking. Alternatively, cook on BBQ. Rest, covered before slicing thinly. Toss in any resting juices.

Serve super seed salad topped with slices of beef. Drizzle over remaining chimmichurri sauce.
