Mediterranean Beef Skewers with Quinoa Salad

Ingredients
Couscous
- 1 tsp Medi spices
- 1 pack pearl couscous
- 2¼ cups water
- 1 tomato
- 1 courgette
- 1 bunch parsley, chopped
- ½ pack Medi dip
Beef
- 10 bamboo skewers
- ½ red onion (optional adults)
- 1 capsicum
- 1 pack beef sirloin steaks
- Remaining Medi spices
To Serve
- Remaining Medi dip

- Oil
- Salt & Pepper
- Vinegar

Cook couscous Preheat BBQ grill to medium (if using). Soak bamboo skewers in water. Heat a drizzle of oil in a medium pot on medium heat. Add first measure of Medi spices, couscous and a pinch of salt and cook stirring for 1 minute, until fragrant.

Add water and bring to the boil. Reduce heat to low. Cover and cook, stirring occasionally for 8-10 minutes, or until tender and liquid is absorbed.

Prep skewers Cut onion into wedges and dice capsicum 2cm. Pat beef dry and cut into 2cm pieces. Toss with remaining Medi spices and a drizzle of oil and vinegar and season. Leave some beef plain for fussier little foodies.

Cook skewers Thread beef, onion and capsicum onto each skewer, repeating until skewers are filled. Heat a drizzle of oil in a fry-pan on medium heat. Cook skewers for 5-7 minutes, turning, until beef is cooked medium and veggies are tender. Alternatively cook on the BBQ.

Finish couscous Roughly chop tomato and grate courgette. Add to couscous along with parsley, first measure of Medi dip and a drizzle of oil and vinegar. Season to taste.

Serve couscous and skewers with remaining dip.
