Ingredients

Lamb

  • 1 pack lamb leg steak
  • 1 pack lamb spices

Salad

  • 1 pack garlic pita bread
  • ½ capsicum
  • ½ Lebanese cucumber
  • ½ pack cherry tomatoes
  • 1 lettuce

To Serve

  • 2 Tbsp hummus
  • 1 Tbsp feta cheese

Have Handy

  • Oil
  • Salt & Pepper
  • Vinegar

Steps

  1. Prep lamb Heat BBQ to medium (if using). Preheat oven to 200°C. Pat lamb dry and toss with lamb spices and a drizzle of oil. Season.
  2. Prep salad Cut each pita bread into 6 triangles and thinly slice capsicum. Toss both on a lined tray with a drizzle of oil, season. Dice cucumber; halve cherry tomatoes; roughly tear lettuce. Place in a bowl.
  3. Cook pita bread Cook pita bread and capsicum for about 10 minutes, until capsicum is tender and pita is golden. Alternatively, cook on BBQ.
  4. Cook lamb Heat a drizzle of oil in a fry-pan on medium-high heat. Cook lamb for about 3 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest, covered. Alternatively, cook on BBQ.
  5. To finish Add pita and capsicum to bowl with salad along with a drizzle of olive oil and vinegar. Toss to combine and season. Thinly slice lamb against the grain and toss in any resting juices.
  6. Serve salad topped with lamb, hummus and crumble with feta
