Beef Sirloin Steak with Cherry Tomatoes, Beans and Salsa Verde

Ingredients

Beef

  • 1 pack beef sirloin steaks

Broccoli

  • 1 broccoli, cut into small florets and stalk diced

Cherry Tomatoes & Beans

  • 1 pack cherry tomatoes
  • 1 can cannellini beans, drained and rinsed
  • 1 pack salsa verde

To Serve

  • Hollandaise sauce

From the pantry

  • Oil
  • Salt & Pepper

Steps

  1. Cook beef Heat a drizzle of oil in a medium fry-pan on high heat. Pat beef dry and cook for 2-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest. Reserve pan.
  2. Meanwhile, prep & cook broccoli Place broccoli in a heat-proof bowl and cover with boiling water and a plate. Leave for 4-5 minutes then drain, return to bowl and season.
  3. Cook tomatoes & beans Return reserved pan to medium-high heat with a drizzle of oil. Cook cherry tomatoes for 2 minutes, until starting to blister. Add a splash of water to help them cook. Drain and rinse cannellini beans. Add beans and toss with tomatoes to just warm through. Remove from heat, stir through salsa verde, any beef resting juices and season. Slice beef if desired.
  4. To finish, serve beef with tomatoes, beans and broccoli. Drizzle over hollandaise.
