Cream Cheese and Mushroom Pizzas with Salad

  • ½ pack tomato paste
  • 1 Tbsp sweet chilli sauce
  • ¼ cup cream cheese
  • 2 Tbsp veggie basil pesto
  • ¼ red onion
  • ½ pack button mushrooms
  • 2 pizza bases
  • 1 cup grated cheese


  • 1 baby cos lettuce
  • 1 tomato
  • 1 Lebanese cucumber

To Serve

  • 2 Tbsp basil pesto

Have Handy

  • Oil
  • Salt & Pepper
  • Vinegar


  1. Prep pizza bases Preheat oven and two oven trays to 220°C. Mix tomato paste, sweet chilli sauce and a small drizzle of olive oil together in a small bowl.
  2. Prep cream cheese and veggies Mix together cream cheese and first measure of basil pesto in a small bowl. Thinly slice onion and mushrooms.
  3. Prep pizzas Spread tomato paste mixture over bases to cover and sprinkle with cheese, onion and mushrooms. Dollop with pesto cream cheese. Season.
  4. Cook pizzas Place pizzas on preheated trays and cook for 12-14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.
  5. Prep salad Roughly chop lettuce and dice tomato and cucumber. Toss all in a bowl with a drizzle of vinegar and olive oil and season.
  6. Serve pizza drizzled with remaining basil pesto, with salad.
