Ingredients
Pumpkin
- 200g pumpkin
Bolognese
- 1 brown onion
- 1 carrot
- ½ pack baby spinach
- 1 pack lamb mince
- 1 pack Bolognese spices
- 70g tomato paste
- 1 can chopped tomatoes
- ½ cup water
- 2 tsp balsamic vinegar
Spaghetti
- 2/3 pack spaghetti
To Serve
- 1 block Parmesan cheese, grated

- Salt
- Pepper

Cook pumpkin Preheat oven to 230°C. Bring a large pot of hot salted tap water to the boil with a lid on. Toss pumpkin on a lined oven tray with a drizzle of oil. Season and roast for about 15 minutes, until tender.

Cook spaghetti and prep veggies Cook spaghetti in pot of boiling water for 8-10 minutes, until just tender. Stir occasionally. Drain and return to pot with a drizzle of oil to prevent sticking. Cover to keep warm. Finely dice onion, grate carrot and roughly chop spinach.

Cook lamb Heat a drizzle of oil in a fry-pan on high heat. Cook lamb for 3-4 minutes, stirring, until browned. Add onion, carrot and Bolognese spices and cook for about 3 minutes, until veggies are soft.

Cook sauce Stir tomato paste, tomatoes, water, balsamic vinegar and ½ tsp salt through lamb. Reduce heat to medium-high and simmer for 3-5 minutes, until sauce is reduced and thickened slightly. Stir occasionally

To finish Gently fold spinach through sauce, along with roasted pumpkin. Continue to simmer for a further 1 minute, until spinach has wilted. Season to taste

Serve spaghetti Bolognese topped with cheese.
