Chicken and Bacon Lasagne

Ingredients

Lasagne

  • 1 brown onion
  • 1 carrot
  • 1 pack chicken and bacon mince
  • 1 pack lasagne spices
  • 1 can chopped tomatoes
  • ½ cup water ^

Cheese Sauce

  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup milk
  • ½ block grated Parmesan cheese

To Assemble

  • 250g fresh lasagne sheets
  • ½ block grated Parmesan cheese

Salad

  • ½ lettuce *
  • 2 tomatoes

Have Handy

  • oil
  • pepper
  • salt
  • vinegar

Steps

  1. Start lasagne Preheat oven to 200ºC. Set aside a baking dish (about 20 x 28cm). Finely dice onion and grate carrot. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and carrot for about 3 minutes. Add mince and cook, stirring, for 4 minutes.
  2. Add spices Add lasagne spices and cook, stirring, for 30 seconds, until fragrant. Stir in chopped tomatoes, water and a splash of soy sauce and leave to simmer on low-medium heat for about 6 minutes, until thickened. Season to taste.
  3. Make cheese sauce Melt butter in a pot on medium heat. Whisk in flour and cook, stirring, for about 2 minutes, until it turns a sandy colour. Add milk in thirds, whisking until smooth. Cook for 2-3 minutes, whisking, until sauce has thickened. Remove from heat, add first measure of cheese, season and stir until smooth.
  4. Build lasagne Spread a quarter of the lasagne mix into baking dish to cover base. Lay pasta sheets in a single layer to cover snugly, cutting to fit if needed. Spoon over another quarter of the lasagne mix. Repeat with remaining pasta sheets and lasagne mix, finishing with lasagne mix.
  5. Finish lasagne and make salad Pour over cheese sauce, sprinkle over second measure of cheese and bake for about 25 minutes, until golden. Remove from oven and rest for a few minutes before serving. Thinly slice lettuce and dice tomatoes 1cm. Toss in a bowl with a drizzle of olive oil and vinegar. Season to taste.
  6. Serve lasagne with salad.
