
Beef Lollipops with Kumara Wedges and Salad

Ingredients
Beef Lollipops
- 10 bamboo skewers
- 1 pack beef mince
- 1 pack lollipop spices
Kumara
- 800g kumara
Salad
- 1 pack cherry tomatoes
- ½ telegraph cucumber
- ½ lettuce
To Serve
- 1 pack smoky BBQ mayo

- pepper
- salt
- vinegar

Cook kumara Preheat oven to 230°C. Soak skewers in water. Slice kumara into quarters lengthways. Toss on a lined oven tray with a drizzle of oil and season. Bake for about 25 minutes, until golden and tender.

Make beef lollipops In a bowl, mix beef with lollipop spices and ½ tsp salt. Divide mixture into 10 equal portions, then use damp hands to shape into 10cm long sausages. Thread one sausage onto each skewer and set aside.

Cook lollipops Heat a small drizzle of oil in a fry-pan on medium heat. Cook lollipops for 8-10 minutes, until browned on all sides and cooked through. Set aside, covered, to rest a few minutes.

Make salad Cut cherry tomatoes in half and thinly slice cucumber and lettuce. Add to a bowl with a drizzle of olive oil and vinegar. Toss to combine and season.

Serve kumara, beef lollipops and salad topped with smoky BBQ mayo.
