Beef Caprese with Pearl Couscous & Basil Pesto

  • 1 pack beef sirloin steaks
  • 1 pack pearl couscous
  • 1 pack green beans
  • 4 vine tomatoes, cut into wedges
  • 1 pack mini mozzarella balls

To Serve

  • Basil pesto
  • Basil

From the Pantry

  • oil
  • salt + pepper
  • vinegar


  1. Before you start, bring a medium pot of salted water to the boil on high heat (using hot tap water, with the lid on - for couscous).
  2. Cook beef Heat a drizzle of oil in a large fry-pan on high heat. Pat beef dry, season and cook for 2-4 minutes each side, for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest.
  3. Meanwhile, cook couscous Add couscous to boiling water and cook for 5 minutes. After 5 minutes, add whole beans to pot, and continue to cook for 3 more minutes, until beans and couscous are tender. Drain well.
  4. Prep tomatoes Toss tomatoes with cooked couscous, beans, mozzarella and a drizzle of olive oil and vinegar. Season.
  5. Slice beef and serve on couscous. Top with basil pesto, basil, and any beef resting juices. Drizzle with olive oil if desired.
