Pork Scotch Steaks with Roasted Kumara and Apple Salad

Ingredients

Salad

  • 800g kumara
  • 2 carrots
  • 1 red onion
  • 2 apples
  • 2 tsp mustard
  • ½ pack baby silverbeet

Pork

  • 1 pack pork scotch steaks
  • 1 pack pork spices

Orange Dressing

  • 1 pack orange dressing
  • Juice of ½ orange

Have Handy

  • oil
  • pepper
  • salt
  • vinegar

Steps

  1. Roast kumara Preheat oven to 220°C. Dice kumara and carrots. Toss on a lined oven tray with a drizzle of oil. Season and roast for about 25 minutes, until golden and tender.
  2. Roast apple and onion Cut onion and apples into wedges. Toss on a second lined oven tray with a little oil. Season and roast on rack below kumara for about 20 minutes, until tender.
  3. Cook pork Pat pork dry, season and toss with pork spices. Leave some plain for fussier foodies. When veggies have 15 minutes remaining, heat a drizzle of oil in a non-stick fry-pan on medium heat. Cook pork for 3-4 minutes each side, until just cooked through. Cover to rest. Slice thickly before serving.
  4. Make dressing Mix orange dressing with 1 Tbsp orange juice and season to taste.
  5. Finish salad Whisk mustard in a bowl with a drizzle of vinegar and oil. Toss through roast veggies and silverbeet and season to taste.
  6. Serve salad and pork with orange dressing.
