Crumbed Pork Steaks with Spiced Potatoes and Salad

Ingredients
Spiced Potatoes
- 150g potatoes
- 1 pack potato spice
Apple Slaw
- ½ apple
- ½ pack slaw
Pork
- 1 pack pork sirloin steak
- ½ Tbsp flour
- 1 egg yolk
- 1 pack panko breadcrumbs
To Serve
- 1 pack red pepper pesto aioli
Have Handy
- oil
- pepper
- salt
- vinegar

Cook potatoes Preheat oven to 220°C. Dice potatoes and toss on a lined oven tray with potato spices and a drizzle of oil. Season and roast for 25 minutes, until tender. Turn once during cooking.

Make slaw Thinly slice apple and combine in a bowl with slaw, a drizzle of olive oil and vinegar and season to taste.

Prep pork Pat pork dry, season and place in a bowl. Add flour to bowl and toss to coat. Add egg to bowl and toss to coat of pork in egg. Place breadcrumbs on a plate, coat pork in crumb, shaking off excess as you go.

Cook pork Heat a drizzle of oil in a fry-pan on medium-high heat. Cook pork for about 2 minutes each side, until golden. Transfer to a lined oven tray and bake for 4-6 minutes, until just cooked through. Set aside to rest, uncovered.

To finish Thinly slice pork.

Serve pork, potatoes and slaw and dollop with red pepper pesto aioli.
