Crumbed Pork Steak with Spiced Potatoes and Salad

Ingredients
Spiced Potatoes
- 800g potatoes
- 1 pack potato spice
Apple Slaw
- ¼ cabbage
- 2 carrots
- 1 apple
- ½ pack baby spinach
Pork
- 1 pack pork sirloin steaks
- 1½ Tbsp flour
- 1 egg
- 1 pack panko breadcrumbs
To Serve
- 1 pack red pepper pesto aioli

- salt
- vinegar

Cook potatoes Preheat oven to 220oC. Dice potatoes and toss on a lined oven tray with potato spices and a drizzle of oil. Season and roast for about 30 minutes, until tender. Turn once during cooking.

Make slaw Shred cabbage until you have about 3 cups worth; grate carrots; thinly slice apple; roughly chop spinach. Combine in a bowl with a drizzle of olive oil and vinegar and season to taste.

Prep pork Pat pork dry, season and place in a bowl. Add flour to bowl and toss to coat. Add egg to bowl and toss to coat each piece of pork in egg. Place breadcrumbs on a plate, coat pork in crumb, shaking off excess as you go.

Cook pork Heat a drizzle of oil in a fry-pan on medium-high heat. Cook pork for about 2 minutes each side, until golden. Transfer to a lined oven tray and bake for 4-6 minutes, until just cooked through. Set aside to rest, uncovered.

To finish Thinly slice pork.

Serve pork, potatoes and slaw topped with red pepper pesto aioli.
