Pulled Pork Burgers with Apple Slaw and Smoky BBQ Sauce

Ingredients

Honey-Roasted Carrots

  • 3 carrots
  • 1½ Tbsp honey (optional)

Pulled Pork

  • 1 pack pre-cooked chipotle pork scotch steaks
  • ½ brown onion
  • 1 pack pork spices
  • 1 pack Culley’s Original BBQ sauce

Slaw

  • 1 apple
  • 1 pack slaw

To Serve

  • 6 burger buns
  • 1 pack honey mustard aioli

Have Handy

  • oil
  • pepper
  • salt
  • vinegar

Steps

  1. Roast carrots Preheat oven to 220°C. Bring a pot of hot tap water to the boil with a lid. Thinly slice carrots into rounds. Toss on a lined oven tray with a drizzle of oil and honey. Season and roast for about 25 minutes, until golden and tender. Turn once during cooking.
  2. Heat pork Keep pork in bag and add to pot of boiling water, ensuring it is completely submerged. Simmer on high heat for about 20 minutes, until hot through. Carefully remove bag with tongs and allow to cool for a few minutes.
  3. Prep slaw and cook onion Thinly slice apple and combine in a bowl with slaw and a drizzle of oil and vinegar. Season to taste. Thinly slice onion. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion with a pinch of salt for about 5 minutes, until golden. Stir through pork spices, stirring for 30 seconds, until fragrant. Remove from heat.
  4. Finish pork Cut open pork bag and drain liquid (reserving 1 Tbsp). Transfer pork to a bowl and pull with tongs or two forks. Toss with onion mix, BBQ sauce and reserved cooking liquid and season to taste.
  5. Heat buns Slice buns in half horizontally and place on a second oven tray. When carrots have about 5 minutes remaining, heat in oven below carrots for about 5 minutes, until warmed through.
  6. Serve burgers filled with aioli, slaw and pulled pork. Serve carrots on the side with any remaining slaw.
