Lamb Quesadillas with Chipotle Sour Cream and Salad

Ingredients
Quesadillas
- 1 red onion
- 1 pack lamb mince
- 1 pack Mexican spice
- 1 pack tomato paste
- ½ cup water
- 1 pack tortillas
- 1½ cups grated cheese
Salad
- 2 tomatoes
- 1 lettuce
- ¼ cabbage
Have Handy
- oil
- salt
- pepper
- vinegar

Cook filling Preheat oven to 220°C. Thinly slice onion. Heat a drizzle of oil in a fry-pan on high heat. Add lamb and cook for about 4 minutes, until browned.

Add onion, Mexican spice, tomato paste and 1 tsp salt to pan. Cook a further 2 minutes, until fragrant. Add water and cook for 2 minutes, until thickened.

Prep quesadilla Lay tortillas flat and spread lamb mixture over one half of each tortilla. Sprinkle over cheese and fold tortilla over to enclose the filling to form a half round.

Cook quesadilla Place quesadillas on a lined oven tray, drizzle with oil and bake for about 10 minutes, until golden and cheese has melted. Leave to cool slightly before cutting in half.

Prep salad Shred lettuce and cabbage until you have about 2 cups of each, and dice tomatoes. Toss in a bowl with a drizzle of vinegar and olive oil. Season. Combine sour cream and chipotle sauce in a bowl.

Serve quesadillas topped with chipotle sour cream and salad on the side.
