
Lamb Quesadillas with Chipotle Sour Cream and Salad

Ingredients
Quesadillas
- ½ red onion
- 1 pack lamb mince
- 1 pack Mexican spice
- 2 Tbsp tomato paste
- ¼ cup water
- 1 pack tortilla wraps
- ¾ cup grated cheese
Salad
- ½ lettuce
- ¼ cabbage
- 1 tomato
Chipotle Sour Cream
- 125g sour cream
- 1 pack chipotle sauce
Have Handy
- oil
- pepper
- salt
- vinegar
Steps

Cook filling Preheat oven to 220°C. Thinly slice onion. Heat a drizzle of oil in a fry-pan on high heat. Add lamb and cook for about 4 minutes, until browned.

Add onion, Mexican spice and ½ tsp salt to pan. Cook a further 2 minutes, until fragrant. Add tomato paste and water and cook for 2 minutes until thickened.

Prep quesadillas Lay tortillas flat and spread mixture over one half of each tortilla. Sprinkle over cheese and fold tortilla over to enclose the filling to form a half round.

Cook quesadillas Place quesadillas on a lined oven tray, drizzle with oil and bake for about 10 minutes until golden and cheese has melted. Leave to cool slightly before cutting in half.

Prep salad Shred lettuce and cabbage until you have about 1 cup of each and dice tomato. Toss in a bowl with a drizzle of vinegar and olive oil. Season. Combine sour cream and chipotle sauce in a bowl.

Serve quesadillas topedp with chipotle sour cream and salad on the side.
