Beef Sirloin Steaks with Kumara Wedges and Béarnaise Sauce

Ingredients

Wedges

  • 800g kumara
  • 1 pack kumara spices (optional)

Slaw

  • 1 baby red cabbage
  • 1 carrot
  • 1 apple
  • 2 Tbsp mayo
  • 1 pack peanuts (optional)

Beef

  • 1 pack beef sirloin steaks

To Serve

  • 1 pack Béarnaise Sauce

Steps

  1. Cook wedges Preheat oven to 220°C. Cut kumara into wedges. Toss on a lined oven tray with kumara spices and a drizzle of oil. Cook for 25-30 minutes until golden and tender.
  2. Make slaw Thinly slice cabbage until you have about 3 cups worth, grate carrot and apple. Toss in a bowl with mayo, a drizzle of balsamic vinegar and olive oil and peanuts. Season to taste.
  3. Cook beef Pat beef dry and season. Heat a drizzle of oil in a fry-pan on mediumhigh heat. Cook beef for 3-4 minutes each side for medium (depending on thickness) or until cooked to your liking. Rest, covered, before slicing thinly and tossing back through any resting juices.
  4. Serve beef with wedges, slaw and Béarnaise sauce.
