Beef and Pork Cottage Pie with Creamy Greens

Ingredients

COTTAGE PIE

  • 200g kumara, peeled and diced 2cm
  • 1 carrot, diced 2cm
  • 1/2 brown onion, thinly sliced
  • 1 clove garlic, minced
  • 1 pack lean ground beef and pork
  • 1 pack cottage pie blend
  • 1/2 pack tomato paste
  • 1/2 cup water
  • 1/2 Tbsp soy sauce

GREENS

  • 1/2 broccoli, cut into small florets
  • 1 pack Brussels sprouts, quartered
  • 1/2 cup frozen peas
  • 1 Tbsp lite sour cream
  • Zest and juice of 1/2 lemon

Steps

  1. Preheat grill to high. Bring a pot of hot salted water to the boil.
  2. Prep & cook mash topping. Cook kumara and carrot in pot of boiling water for about 18 minutes, until very tender. Drain well, return to pot and mash well with a pinch of salt. Keep warm.
  3. Prep greens.
  4. Prep & cook pie filling. Heat 1/2 tsp oil in a frypan on medium-high heat. Cook onion and garlic for 1-2 minutes. Add ground beef and pork and cook for 3-4 minutes, breaking up, until browned. Add cottage pie blend and tomato paste and cook for 1 minute. Add water, soy sauce and 1/4 tsp salt. Bring to a simmer and cook for about 5 minutes, until thick. Season to taste and remove from heat.
  5. Finish pie. Transfer mixture to a medium baking dish and top evenly with kumara. Use a fork to rough the top of pie and grill for 4-5 minutes to crisp.
  6. Cook greens. Heat 1/2 tsp oil in a fry-pan on medium-high heat. Add broccoli and Brussels and sauté for 4-5 minutes. Add peas and 2 Tbsp water and cook for a further 1 minute, until greens are tender. Stir through sour cream and lemon and season to taste.
  7. Serve pie with greens on the side.
