
Beef Rump Steaks with Chips and Brussels Sprout Caesar Salad

Ingredients
Chips
- 800g potatoes
- 1 parsnip
- 1 carrot
- 1 pack chip spices
Beef
- 1 pack beef rump steaks
Brussels Caesar
- 1 pack Brussels sprouts
- 1/4 cabbage
- 1 pack Caesar dressing
- 1/2 block Parmesan cheese

Cook potatoes Preheat oven to 230°C. Cut potatoes, parsnip and carrot into chips and toss on 2 lined oven trays with chip spices and a drizzle of oil. Season and roast for about 25 minutes or until tender. Swap trays halfway through cooking.

Make Caesar Thinly slice Brussels sprouts. Thinly slice cabbage until you have about 2 cups worth.

Finish Caesar Toss both in a bowl along with 1/2 pack of Caesar dressing, Parmesan cheese and a drizzle of vinegar and olive oil. Season and set aside.

Cook beef Pat beef dry and season. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook beef for about 3 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest for a few minutes before slicing. Thinly slice beef.

Serve Caesar with beef and chips and remaining Caesar dressing and Parmesan cheese.
