Beef and Venison Bolognese with Spelt Spaghetti and Silverbeet

Ingredients

BOLOGNESE

  • 1 brown onion, finely diced
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 pack mushrooms, thinly sliced
  • 1 pack lean ground beef and venison
  • 1 pack Bolognese spices
  • 1 Tbsp tomato paste
  • 1 can tomato passata
  • 1 tsp balsamic vinegar
  • 1/3 cup water

PASTA

  • 3/4 pack spelt spaghetti
  • 1/2 pack baby silverbeet

TO SERVE

  • 50g feta cheese
  • 1 bunch basil, picked

Steps

  1. Bring a pot of hot salted water to the boil.
  2. Prep & cook Bolognese. Heat 1 tsp oil in a fry-pan on medium-high heat. Cook onion, garlic, carrot and mushrooms for about 4 minutes, until tender. Remove veggies from pan and return pan to same heat.
  3. Add ground beef and venison to pan and cook for about 4 minutes, until browned. Add Bolognese spices and tomato paste and cook for about 1 minute, until fragrant.
  4. Return vegetables to pan and add passata, vinegar, water and 3/4 tsp salt. Bring to a simmer and cook for about 5 minutes, until thick. Season to taste.
  5. Cook pasta. Cook pasta in pot of boiling water for 5-6 minutes, until tender. Add silverbeet and drain immediately. Return to pot and season.
  6. Serve pasta topped with Bolognese sauce. Crumble over feta and sprinkle with basil.
