Lamb Roast with Broccoli Smash

Ingredients

Roast Lamb

  • 150g potatoes
  • 1/2 parsnip
  • 1/2 brown onion
  • 1 pack lamb leg steak
  • 1 pack lamb spices

Smash

  • 1/2 broccoli
  • 1 bunch mint roughly chopped

Gravy

  • 1 pack gravy

Steps

  1. Roast potaotes Preheat oven to 220°C. Dice potatoes 2cm; cut parsnip into 2cm rounds; cut onion into quarters. Toss with a drizzle of oil on a lined oven tray. Season and roast for about 35 minutes, until golden and cooked through.
  2. Prep smash Cut broccoli into very small florets and finely dice stalk.
  3. Cook lamb Pat lamb dry and toss with lamb spices and a drizzle of oil. Season. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook lamb for about 3 minutes each side for medium, depending on thickness or until cooked to your liking. Rest, covered. Reserve pan.
  4. Cook smash Bring a pot of salted water to the boil. Add broccoli to pot of boiling water and cook for about 3 minutes, until bright green and tender. Drain well and return to pot along with mint. Mash and season to taste.
  5. Make gravy Return pan to medium heat. Add gravy, a splash of water and any lamb resting juices to pan. Whisk and cook for about 1 minute, until heated through and slightly thickened. Season to taste. Thinly slice lamb against the grain.
  6. Serve roast lamb, broccoli smash and roast veggies topped with gravy.
