Butter Chicken Pizza

Ingredients
Pizza
- 1 pack butter chicken paste
- 1 pack chicken breasts
- 1/2 red onion
- 1 courgette
- 1 pack tomato paste
- 1 pack pizza bases
- 1 pack Colby cheese, grated
Salsa
- 1 Lebanese cucumber
- 1 tomato
- 1 bunch coriander
Yoghurt
- Reserved butter chicken paste
- 1/4 cup yoghurt
- 1 tsp sweet chilli sauce

Prep chicken Preheat oven to 220°C. Preheat two oven trays. Place 1 tsp butter chicken paste in a bowl and set aside to make yoghurt. Pat chicken dry, slice 1cm and toss in a bowl with remaining butter chicken paste and 1/2 tsp salt.

Cook chicken Heat a drizzle of oil in a fry pan on medium-high heat. Cook chicken for about 2 minutes each side or until just cooked through.

Prep pizza Thinly slice onion and dice courgette. Divide tomato paste between bases and spread evenly to cover. Top with onion, courgette, cooked chicken and cheese.

Cook pizza Transfer pizzas to each preheated tray and cook for 12-14 minutes, until bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Make salsa Dice cucumber and tomato and roughly chop coriander. Toss in a bowl with a drizzle of vinegar and olive oil. Season. Add yoghurt and sweet chilli sauce to bowl with reserved butter chicken paste, stir to combine.

Serve pizza cut into wedges with salsa and yoghurt.
