Chipotle Pulled Pork Pie with Sour Cream

Ingredients

Pie Filling

  • 1 brown onion
  • 1 carrot
  • 1 courgette
  • 1 pack chipotle spices
  • 1 pack chipotle pork
  • 1 can chopped tomatoes
  • 1/2 pack baby spinach

Pie Top

  • 800g pre-cooked potatoes
  • 1 cup grated cheese

To Serve

  • 1/2 cup sour cream

Steps

  1. Prep filling Preheat oven to high grill. Thinly slice onion; grate carrot; cut courgette in half lengthways and thinly slice; thinly slice potatoes.
  2. Cook filling Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and carrot for about 4 minutes, until tender. Add chipotle spices and cook for 1 minute, until fragrant.
  3. Add courgette, chipotle pork, canned tomatoes and 1 tsp salt. Reduce heat to medium and simmer, covered, for about 10 minutes, until slightly thickened. Add spinach and roughly pull pork with 2 forks. Season to taste.
  4. Cook pie Transfer pie filling to a baking dish. Arrange potato slices on top of filling and sprinkle with cheese. Grill for about 8-10 minutes until golden.
  5. Serve chipotle pork pie with a dollop of sour cream.
