
Chipotle Pulled Pork Pie with Sour Cream

Ingredients
Pie Filling
- 1 brown onion
- 1 carrot
- 1 courgette
- 1 pack chipotle spices
- 1 pack chipotle pork
- 1 can chopped tomatoes
- 1/2 pack baby spinach
Pie Top
- 800g pre-cooked potatoes
- 1 cup grated cheese
To Serve
- 1/2 cup sour cream
Steps

Prep filling Preheat oven to high grill. Thinly slice onion; grate carrot; cut courgette in half lengthways and thinly slice; thinly slice potatoes.

Cook filling Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and carrot for about 4 minutes, until tender. Add chipotle spices and cook for 1 minute, until fragrant.

Add courgette, chipotle pork, canned tomatoes and 1 tsp salt. Reduce heat to medium and simmer, covered, for about 10 minutes, until slightly thickened. Add spinach and roughly pull pork with 2 forks. Season to taste.

Cook pie Transfer pie filling to a baking dish. Arrange potato slices on top of filling and sprinkle with cheese. Grill for about 8-10 minutes until golden.

Serve chipotle pork pie with a dollop of sour cream.
