Japanese Beef with Sesame Veggies

Ingredients
Rice
- 1 cup jasmine rice
- 1 1/2 cups boiling water
Veggies
- 1/4 cauliflower
- 1/2 broccoli
- 1 baby bok choy
- 1/4 cup water
- 1 pack sesame seeds
- 1/2 Tbsp sesame oil
Beef
- 1 pack beef sirloin steaks
- 2 Tbsp soy sauce
- 1/2 Tbsp sesame oil
To Serve
- 1 pack goma dare sauce
- Garlic chilli blend

Cook rice Bring a full kettle to the boil. Add rice, boiling water measure and a pinch of salt to a medium pot and bring to the boil with a lid on. Reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.

Prep veggies and beef Cut cauliflower and broccoli into small florets and cut bok choy in quarters lengthways. Set aside separately. Pat beef dry and season. Toss in a medium bowl with soy sauce and sesame oil.

Cook beef Heat a drizzle of oil in a fry-pan on medium-high heat. Remove beef from marinade (reserve marinade) and cook for 2-3 minutes, each side for medium (depending on thickness), or until cooked to your liking.

Add marinade to pan with beef and cook for a further minute, until reduced. Set beef and reduced marinade aside, covered, to rest before slicing thinly against the grain. Toss beef slices through resting juices before serving. Reserve pan.

Cook veggies Return pan to medium-high heat. Add cauliflower and bok choy and cook for 2 minutes. Add broccoli and water measure and cook for a further 2 minutes, until veggies are just tender. Add sesame seeds and sesame oil and cook for 1 minute, until fragrant. Season to taste with soy sauce.

Serve rice topped with sesame veggies, beef, goma dare sauce and a pinch of garlic chilli blend.
